I can’t believe it’s June already. It’s starting to feel very, very Summer-y and I love it. We are going strawberry picking on Friday and we can’t wait. I love Summer. BBQ’s, lazy days at the beach, early evening walks, ice cream, fresh fruit. This here is one of my all-time favorite recipes to make in the Summer months. I’ve been making this recipe for years and it originally hails from Allrecipes.com. I guarantee you’ll love it!
How To Make Fruit Salsa & Cinnamon Chips
2 kiwi’s, peeled and diced
2 apples, peeled, cored and diced
8 oz. raspberries
1 lb strawberries, diced
2 Tbsp sugar
1 Tbsp brown sugar
3 Tbsp preserves
In medium bowl, mix all fruit, sugar and preserves. Cover and chill in refrigerator for at least 15 min. Pre-heat oven to 350 degrees. Spray one side of tortilla’s with cooking spray and sprinkle with cinnamon sugar. Cut into wedges/strips. Spray again. Arrange on baking sheet and cook for 8-10 minutes. Repeat with remaining tortilla’s Let cool for 15 minutes.
